So, DS was flipping through a cookbook and saw a recipe for Pickle Chicken. You take chicken and marinate in the juice of dill pickles overnight, cook up a glaze (which features chopped dill pickles) and bake. Did anyone ever try a recipe like this? It sounds AWFUL to me, but I'll make it if someone tells me it even has a prayer of coming out edible. It sounds like someone's pregnancy fantasy dish to me.....

It was in this month's Better Homes and Gardens. Didn't try it, but I generally trust their recipes, the ones I have tried always come out great. I'd be a bit wary of this one though,because kosher poultry comes essentially pre-brined, so I wouldnt recommend brining it again.

sounds awful to me too ...
but you can always try anything once ... let us know
they do after all pickle beef ... hence corned beef & pastrami

Actually, kosher chicken is not considered brined. It is salted for only 1 hour. To brine s/t, it must marinate for much more than that.
I still wonder how this recipe would taste.

Why not just make a brined chicken recipe? Beer brined chicken is delish. And you can make a pickle dip for dd on the side There was a nice dip in the Mishpacha a little while ago.

FYI, a certain non-kosher restaurant chain (who uses cows to advertise...) reportedly uses pickle juice as its secret chicken marinade. It might work!
