Sweet Potato pie recipe

2 sweet potatoes

1/4 cup of brown sugar
1 tsp cinnamon
1 tsp of cloves
3 tbsp non dairy creamer
1 egg

Mash the sweet potatoes, add the rest of the ingredients and place it in a 9 inch pie crust (not gram cracker ) place it in the oven on 350 and take it out when the knife comes out clean.

Enjoy!!

I think I am going to make this for shabbos I have a lot of sweet potato but nothing to do with them. it also comes out very good but just a bit soft so you have to be careful when serving without a crust I have done it many times. my kids tell me it taste like pudding.

another substatute you can use is instead of non dairy creamer use soy milk it gives it a different taste slightly but comes out the same.

It's called "Pecan and Sweet Potato Bake", on page 226 of Kosher by Design:

3-4 large sweet potatoes, peeled and cubed
1/2 c sugar
1/2 c soy milk or nondairy creamer
1 large egg, beaten
3 tablespoons margarine, cut into slices
1/2 tsp vanilla
1/2 c dark brown sugar
1/3 c flour
3 tablespoons margarine, melted
1/2 cup pecan pieces (I never put these in)
8-10 pecan halves, for garnish, optional (never used these either)

Large pot: bring 2 inches of water to boil, add sweet potatoes, cook and cover for 25-30 min, until tender. Drain and return to pot. Add sugar, soy milk, egg, margarine, and vanilla to sweet potatoes. Using back of wooden spoon, gently mix, try not to mash the sweet potatoes too much.

Transfer mixture to sprayed 2-quart baking dish. In another bowl, combine brown sugar, flour, melted margarine, and pecan peices. sprinkle topping over sweet potatoes. Bake at 350 uncovered for 25 minutes or until set.

Garnish with pecan halves, if desired.

That's it! Yum, now I want some ...

I just made that for the first time this Shabbos. It was delicious (I thought it was a drop too sweet but no one else agreed with me). DH usually doesn't like anything sweet potato and he LOVED this. Even asked me to make it again! Oh, and to save time- I used one big can of sweet potatoes instead and the recipe says to heat them on the stove for 5 minutes and then continue with the above recipe.

This is my favorit sweet potato pie recipe - I like to cook it a bit longer than the recipe calls for. (It's not healthy at all, but VERY good!)

Old Fashioned Sweet Potato Pie

1/2 c Butter,softened
1/2 c Packed brown sugar
1 c Sweet potatoes,mashed,cooked
3 ea Eggs,lightly beaten
1/3 c Corn syrup
1/3 c Milk
1/2 t Salt
1 t Vanilla extract

1 ea Unbaked pie shell


Cream butter and brown sugar in bowl until light and fluffy.Blend in sweet potato and eggs.Add next 4 ingredients;mix well.Pour into pie shell.Bake in a 425 degree oven for 10 minutes.Reduce heat to 325 degrees and bake 35 to 45 minutes longer or until well set.Yield: 6 servings.

Here's mine:

Sweet Potato Pie
In pie crust: (some people skip this and it's still good- just put in straight in a pan)

1/2 cup sugar
2 eggs
1 tsp vanilla extract
1/2 cup non dairy milk
1/4 cup melted margarine
mix and then add
5 medium sweet potatoes= 2.5 cups mashed

Top:
1/2 cup brown sugar
1/2 cup flour
1/4 cup melted margarine
1/4 cup chopped peecans

bake 350' 45 minutes

I freeze mine all the time, I reheat it straight from the freezer, it freezes and reheats so well.
my recipe is from kbd or kosher pallette I cant remember which.
