Thinking ahead for pesach- anyone have a recipe for gluten free, egg free, kitniyos free matza balls? Quinoa (but not quinoa flakes) and flax seeds are ok.

what kind of matzohs do you use? can you grind them up into a gluten free matzo meal? I have no idea what you would use instead of the egg. lots of water and potato starch?
I'm thinking it might not be worth the trouble.

liebers makes an amazing mix for pesach!!! just add a t. of oil. and one egg-im sure you can be creative with a sub. though. I use it all year round.

I tried using the non gebroks matzah meal mixes last year to make a egg free matzah balls and it was a disaster. Pure mush. Couldn't think of anything to use but if u use flax you could try to make a flax egg...
