I did not use any oil (except to grease the pan) instead I added enough applesauce until it was the consistency of kugel batter. I also used whole wheat flour and I used white sugar (but less than the 1/2 cup the recipe calls for) I added in raisins, and did not use nuts or icing.
this kugel comes out moist and delicious I have made it twice. and today I didnt have enough butternut squash so I added in sweet potato and that works well too..couldnt wait for shabbos I had tot try a piece hot out of the oven.
