I need a side dish that I can make on thursday for shabbos day. Already making carrot muffins and deli roll. What vegi would stay "fresh" if made ahead.

Broccoli salad/green beans....
Here is a delicious pareve quiche that I serve shabbos day, but a bit of a patchka
Saute in 2 Tbs oil:
1 large onion
8 small/med zuchinnis (wash well and keep peel on, slice in thin circles)
3 large eggs
4 tsp parsley chopped
1+ tsp salt
black pepper
garlic powder
oregano
basil or handful of spinach (optional)
Put a thin layer of mustard on bottom of greased pyrex and then put mixture or e/t together in.
BAKE on 400 for 20 minutes uncovered and then 15 min covered.
I warm on hot plate for shabbos day.
