I was planning to make strawberry shortcake style mini trifles (for a simcha-not MM) and was planning to use strawberry jam mixed with whip for the pink part and top with plain whip (in other words: cake, then whip and jam mixture and them plain whip). Did something else in the end, but I don't see why it should not be good. Not as good as the real thing, maybe, but good enough.

How about you make the cake part in cupcakes, then put the whip on top, and then a dollop of strawberry jam as a garnish? The cake plus whip on its own will taste similar to strawberry shortcake, with the additional plus of the jam giving some flavor.
