"Double Chocolate" Hamantachen
makes 4 oz
2 sticks marg
1 cup sugar
1/4 cup brown sugar
2 eggs
1/2 cup liquid
2 tsp vanilla
2/3 cup cocoa powder
Approx 4 1/2 cups flour
1/4 tsp salt
2 1/2 tsp baking powder
Egg wash- egg, water, and some sugar
Filling - from 12 oz can or use jelly
Cream your sugars & marg. Add eggs and blend until smooth. In sep. bowl, combine cocoa, liquid, and the vanilla until pastey. Stir together and add your flour, salt, and baking powder. Mix to make firm but soft dough.
Let stand to absorb the liqud and fridge it for about 15 minutes for easier rolling.
preheat the oven to 350 and prepare your baking pans.
Rollout the dough into 1/2 to 1/8 thicknesses and cut your 3 1/2 inch rounds. Do the eggwash and you filling and make the triangles.
Scraps can be rerolled once without tasting too tough.
Leave some filling showing, do your eggwash again, and bake about 18-22 minutes.
Dip in melted chocolate and coconut, or chocolate and nuts, or choc and sprinkles, for a festive touch!

Peanut butter . ....strawberry jelly .........a friend recommmended a nutty choc spread from the Shuk but it's $$$$$$$
