Spinach mushroom onion quiche

Sauté onions
Add mushrooms and spinach
In side bowl mix:
1 egg
Onion soup mix
Onion powder
Garlic powder
Mayo
Salt pepper

Mix well and add the spinach mix to this.
Pour into a pie crust
Sprinkle bread crumbs in top
Bake 350 for about an hr or golden in top.

SPINACH PIE

20 oz frozen chopped spinach
1 T margarine ( I use Smart Balance)
1 T flour
1 T onion soup mix
3 eggs, beaten
1/2 c almond or soy milk
1 deep dish pie shell

Cook and drain spinach, add margarine, flour and soup mix. Mix pareve milk and eggs and add to spinach.
Pour into pie shell. Bake at 350 until the crust is well browned.

I sometimes make this with frozen chopped broccoli instead of spinach.

This is a bubbe-style recipe, no fixed amount of ingredients. Just include the amounts you want. *

Spinach Kugel
Defrost spinach. Chop roughly with knife if not already chopped. Saute onion in oil until golden. Add to spinach. Add eggs (as many or as few as you want. A lot of eggs will make it more like quiche.) Add salt (usually 1 tsp) and pepper. Bake at 350 until set and browned around the edges (around 30 minutes). Comes out pretty flat and cuts well.

For dairy variation, can add cottage cheese to the mix or top with shredded cheese.

* I typically use a large bag of frozen spinach, one large onion and about 1/2 cup of egg substitute.

MaBelleVie, is it good at room temp? I made a dip, a bit tired and another cold starting, seemed easiest but I think this would have gone over well. Another time....

Spinach dip is always popular! Yes, I enjoy it at room temp. Other people might not, though. I would warm it on the blech or crock on Shabbos.
