Instead of gefilta fish, I have been making sushi salad. So yummy and filling!
I also make potato kugel in the crock pot instead of cholent. Maybe add some pastrami to it.
Chicken or turkey salad are also good.

you could make cold cut sandwiches with potatoe salad
you could make brisket for friday night & take it out in the am so it's room temp
deviled eggs / tuna / salads / dips

Most weeks, this is my shabbos lunch menu:
First I serve salmon, then grilled chicken salad (I warm up the chicken on top of the cholent shabbos morning), then cholent and sweet potato kugel, then dessert.

This week, I'm trying a Portobello mushroom salad from imamother, as well as chicken nuggets and buffalo sauce from Fresh and Easy, and cholent.
Anon because I'm having guests- maybe they are on this site!
Some weeks I do wings/drumettes, or chicken nuggets in honey mustard sauce, or grilled chicken salad (many different recipes, try a salad with a lot of pesto/ basil for a different spin)
You can do a pastrami or corned beef: pastrami you can leave in the oven on low all Shabbos, so it's soft and delicious Shabbos day.
