I use the same. I prefer yukon gold for everything, but a good old-fashioned russet will do in a pinch.

I use Yukon Gold for all my potato cooking needs. They are yummiest, and butteriest tasting potatoes. They work well in kugels, cholent, and salad.

I should switch. I always use russet but I recently tasted a kugel with yukon and it was much better!!

how do you cook the potatoes? if you're boiling them, you have to make sure not to overcook them. I make potato salad out of leftover baked potatoes. they don't get mushy.

When I make potatoe salad I peel and cube the potatoes before cooking. I cook them that way and then drain them and let It cool till it's lukewarm and then mix in the rest of the stuff. I find this to be the best way.

I prefer to bake the potatoes, that way they don't get soggy at all. they stay nice and firm. you can do this in the microwave or in your oven. I don't generally time them in the oven. 45 minutes should do it.
