In the past I have gotten great recipes from this site using no processed foods (not even Potato starch)
Any ideas? I need more snacks/cakes etc

Can you tell us what you already make, so we can give you other ideas? Sorbets, cooked, or fresh fruits are always good.
Are you opposed to all potato starch, or just commercially prepared? You can make it yourself, too. And do you use granulated sugar? If not, what sweetener (if any) can you work with?
I like new ideas, and making things from scratch. I am not so strict, but am strongly considering making my own coconut milk from fresh coconuts this year.

I just made a bunch of dried apples.
Peel, core and slice apples into thin rings.
Put on baking paper, single layer in the oven (if you use oil I suggest lightly oiling the baking paper to make sure they don't stick. I put them on 50*C but 135*F or as low as your oven goes works. Convection is ideal. Cool for 6-8 hours, checking periodically. They should be soft and bendable.
Do you use dairy?
Just in case the other thing I made now was ice cream, but the same recipe makes good egg custard.
Egg custard:
mix 2 cups sugar and 12 eggs in bottom of large pot, still well until.
Gradually add 2 liters (half a gallon) of milk
put on medium flame and heat while stirring constantly until thickened. It should make a thick coating on the back of the spoon when done and will thicken further as it cools. Yummy warm or cold.
To make it into ice cream chill and then add heavy cream (about 4 cups/1 liter, but more of less according to your needs) or some more milk and churn in ice cream maker. Follow manufacturers instructions.

Liba's Toffee/Caramel Recipe
Ingredients:
3 cups sugar
200 grams (two sticks) butter
one liter (four cups) milk
250ml (1 cup) heavy cream
Time: two hours cooking, plus cooling time
Equipment:
One large (at least 4 quart) pot
good comfortable spoon for stirring
9x13” pan lined with parchment paper and lightly oiled
At least two people to switch off stirring.
In large pot on medium flame caramelize the sugar with 25 grams of butter. It should take about 10 minutes to get a nice caramel brown color and liquid sugar.
Turn down the heat, add remaining butter and stir until incorporated
Add milk and heavy cream.
The caramelized sugar will become solid and taste like crunchy toffee bars.
Turn the heat up to medium high and stir until sugar is again liquid and incorporated into the milk and cream mixture, about half an hour.
Continue stirring until you have a beautiful thick caramel, about 45 minutes. Pour into into a pan lined with parchment paper and lightly oiled.
Cool and cut into small pieces with a buttered knife.
Substitutions, cream can be left out or increased. Oil can be substituted for butter, but it will change the flavor.

No processed foods?
I eat that way most of the time. It's pretty easy. Boiled chicken with fresh herbs.
Veggies - steamed, baked, boiled, plain or with herbs.
And fruit -- fresh, steamed or baked.

If you read carefully, none of my recipes need margarine (I don't use it) and they can be done without the heavy cream as well. If you can get unpasteurized milk, the cream is the part that rises to the top.
