I'm aware that halachically we must avoid roast meat or poultry at the Seder; however, I'm unclear as to what's considered roast. Broiled? Fried? Browned on a flame and then cooked in its sauce (which is my MIL's standard Pesach menu which she doesn't make for the Seder because she considers it roasted...)? I assumed it was just broiled that is prohibited, but my MIL's is definitely not broiled. For one Seder I'm serving chicken cooked in grape juice (similar recipe mentioned in Family First magazine)- I know that's ok. For the other seder I'd like to serve "breaded" chicken cutlets baked over sauteed onions. Is that ok? I get so confused. Are there different opinions as to what may be served at the Seder?

According to rav google: "Roasting is a cooking method that uses dry heat, whether an open flame, oven, or other heat source"
The key here is "dry heat." That means frying and boiling are fine.

my rav said as long as there is a liquid sauce I can bake chicken or meat.
frying, I am not sure.
but it does not have to be boiled. (yuck)

Im not sure of the halacha but I think I read that frying I not allowed . And nothing dry, you need water. Ask your Rav.

Lots of minhagim here. The sefaradim I know, many of them davka have roast lamb at the seder...so go know.

I was told roasting refers to open-flame roasting as in korban pesach, baking covered in the oven with gravy does not count, neither does frying on a frying pan.
