Liver blintz
Saute 1 onion, add salt, pepper, and about 2 tsp sugar (I use sugar substitute). When golden, add 1 pk liver and saute until liver is heated but not to long or it turns hard.

In food processor, or using hand blender blend 2 eggs, liver mixture, and oil (or mayo) as much as needed for right consistency. Smear onto a blintz crepe and fold up. (top and bottom first then roll up jelly roll style)
