Are raw eggs really that bad? If so, why are the cookbooks full of ice cream recipes that use raw eggs? (and people are making them and eating them and staying alive ) Does the freezing maybe kill the bacteria?

I'd venture to say the more recent books probably try to limit their use in recipes.

I think they continue to make things out of habit - if it didn't kill us before - why would it now. My mother never eats anything made with raw eggs - just cause the thought makes her sick. I have learned to make chocolate mousse without eggs.

raw eggs are only dangerous if they already have bacteria in them. few people get sick from them, but there is still that chance and therefore most people -but not all- dont like to use them.

I never knew raw eggs were a problem for a long time. its a tradition in my family to break a fast w/ "eggy" which is made w/ raw eggs - put it in coffee, eat it alone. really yummy. and we are all ok.

it's b/c of salmonella - some dom't care, some will buy eggs that were specially treated.

If the eggs are pasteurized then they are probably fine. But pregnant women should probably stay away from raw anything.

manny, us too! But not raw eggs, but soft boiled.
Are you really referring to raw eggs? soft boiled are ok to eat- as long as the white is not runny it's cooked enough.
egg in coffee?

I think there's a flash-pasteurized egg product on the market which is as safe as cooking eggs.
