I bought skirt steak for pesach and can't remember what the butcher told me to do. I think that I should marinade it in pineapple sauce, add wine and caramelized onions. Does this make sense to the expert cooks over here? Also doesn't it need salt and pepper ? Can anyone help me? I'd really appreciate it. Keep in mind that I dont use a lot of processed foods. Thanks

The marinade sounds good. You definitely doesn't need salt as skirt steak is very salty to begin with, as a matter of fact, I make sure to rinse it a lot before cooking to get rid of some of the salty flavor.

Don't marinade it too long or it will turn into mush. Half hour at most.

for well done, you can broil it for 15 minutes total, flipping halfway through
