Cheese Latkes
1 16 oz. container cottage cheese
2 eggs
1 cup potato starch
3 Tbsp. sugar
Oil for frying
Mix cottage cheese, eggs, potato starch and sugar together in a large bowl. Heat oil in 7" frying pan. Drop mixture, a spoonful at a time, into frying pan and fry on each side until brown.
