Meatballs and ?

Normally I would serve it with spaghetti or rice, but being pesach, that's not an option. I would do mashed potatoes, but I'm serving potatoes the night before. I wouldn't serve it with anything, but we're having company that day, so I have to. Any ideas besides potaoes or root vegetable? My kids don't care for them. Thanks!

Thanks but I forgot to mention no zucchini either. They don't like it. Also can't get spaghetti squash and I said no root vegetables. This is why I'm having a hard time. Confused

I just ate somewhere they placed each meatball on an artichoke bottom then dipped the whole thing in some kind of batter (egg and potato starch I'd guess) and fried it. Outrageously good. I'm going to try to copy it but in a baked version.

Would sweetpotato kugel or baked sweetpotato do? Otherwise I don't think it's necessary to have an accompanying starch and just meatballs with green salads or other cooked vegetables, as pesach diet tends to be just too much carbs anyway.

If you eat quinoa, that'd be perfect. Otherwise, mashed cauliflower would be a good way to go.

I made a potato kugel of thickly shredded potatoes and that went very well with the meatballs.
