Cheesecake with whipped cream cheese

1 8 oz package of whipped cream cheese
1 8 oz package of farmer's cream cheese
2 eggs
2 tsp vanilla
3/4 cup sugar
juice of 1/2 a lemon

mix together & pour into graham cracker pie shell

so many variations can be made from same recipe

Light Cheese Pesach CakeBake 350. in square 8 x 8 pan
(can be made in round pan also)
4 eggs
12 0z. cream cheese or farmer cheese
¾ c. sugar
1 tsp. vanilla
optional 1 tsp lemon juice
lady finger cookies
oil spray can
sour cream

You will need 2 bowls.

In food processor, grind up lady finger cookies to make ¾ crumbs (approx). This will be used to coat the bottom of the pan (thicker coating) and to lightly cover (sprinkle) the top of the cake.

Separate the eggs, putting the egg whites in small bowl and make a snow from it.

Put the egg yellows in the large bowl and add in the cheese, sugar, vanilla and lemon juice.
Slowly fold in the egg whites to the cheese and sugar mixture.

8 x 8 pan spray with oil.
Cover with lady finger cookies crumbs.
Pour in mixture.
Bake 30 minutes.

Remove from oven and spread sour cream on top by dotting the cake with sour cream and then spreading it. (Because the cake is so hot, it is hard to spread it immediately. The heat will melt the sour cream and help to spread it after a few minutes.)
Bake 10 minutes more.
