Dice the zucchini. Steam. Blend it in the blender, use a little water or milk to thin it down the way you like it. Season with salt to taste. Easy and nutritious.

Use cream cheese instead of milk (if you want it milchig).

If you want it pareve or fleishig, use vegetable or chicken stock and add a grated potato (or a handful of mashed potato flakes) to give it more body.

This is what I do:
Sauté around 3 onions until golden.
Scrub and dice 6-8 zucchini (where I'm located they are small, if you have the big ones you can do less I suppose). You can also peel them but I prefer to cook with the peels.
Add zucchini to the onions and sauté for around twenty minute. If you prefer thicker soups, you can add a couple of diced potatoes at this point too.
Add water to cover along with salt and pepper to taste. Some add chicken consommé but this can be skipped.
After bringing to a boil, let it simmer for at least two hours.
Blend to preferred smoothness.

Zucchini Potato Soup
Saute 1 1/2 onions (or 1 large + 1 medium) in 2 Tbsp oil.
Then add:
3 stalks celery, cubed
3 medium-large squash, cubed. (Peel one hand a half squash and leave the other one and a half unpeeled.)
Let cook half an hour.
Then add 4 cubed potatoes.
Add 4-6 quarts water.
2 Tbsp salt
1/4 tsp black pepper.
Let cook 1.5 hours and then blend.

sutee 1-2 onions, then add 2 carrots, 1-2 potatoes, 3-4 squash & sutee couple minutes
-add water just to cover.
-bring to boil & then cook apprx 1 & half hours
1-2 TBsp salt & sprinkle black pepper
blend & enjoy
yum!

1. Cut zucchini into chunks.
2. Steam until soft.
3. Blend using immersion blender.
4. Add amaranth (for texture and protein), brown sugar and cayenne pepper.
5. Simmer for 15 minutes.
