Any suggestions what to do with it, other than pancakes or french toast?

make fake blintzes by layering filling between unsalted-top saltine-type crackers, dip the sandwiches in beaten egg, and pan-fry.

Did you mean you have leftover blintz batter, maybe? I can't imagine how you'd make French toast out of cheese blintz filling.

No, Blintz filling mixture. It was too runny, so I added some flour to it. I was wondering if I could make a cheese cake out of it.

You can make chocolate or marble muffins and put a spoonful of filling in each muffin before baking.

I don't see why not...my mom made cheesecake out of farmer cheese, eggs, sugar, cornstarch, and vanilla. Maybe a dash of lemon zest . And a top and bottom crust. But it would depend on how much flour you used. I think you need just the tiniest bit as the starch swells as it cooks. Too much and you would taste the flour.

Pour into a graham cracker crust and bake...its all the same idea!

FTR I have never made blintzes so I've never tried this.

Add some flour and butter, mix well, pour into a butter-greased loaf pan and bake.
Serve neat slices with fresh berries on top.
Blintz loaf!
