Squash soup
1 sautéed onion
6-7 squash with peel
2-3 potatoes
Cover with water and boil
When soft add
1 cup milk
Salt to taste ( more than u think)
Black pepper
Garlic powder, a lot
8 slices American cheese
Purée with hand blender
Serve with more cheese And croutons

French onion soup
5-6 onions, sliced in circles and sautéed till brownish and really soft ( about an hr)
Cover with water
Cup of milk
1 1/2Tablespoon sherry cooking wine
1 teaspoon instant chicken soup mix
Black pepper, salt and garlic to taste
3-4 American cheese
Bring to a boil
Serve with more cheese with fresh garlic bread
Yummmmm! Enjoy!

potato and leek soup
* top and tail 1kg leeks, slice both white and green parts in 1cm disks then soak to clean. Change water once to get rid of sands. Drain well. Peel 3 potatoes and cut into 3-4cm cubes.
* sauté leeks in a generous blob of butter, sprinkle salt and continue to cook for about 10min or so stirring till they soften. Add a dash of white pepper. Add potatoes and sauté for a few more minutes, pour 3-4 cups or enough vegetable broth to cover (or water and parve soup cute). Cook for 30-40min till everything is very soft.
* Turn off heat, puree till smooth, adjust seasoning. Add 1/2 cup single (cooking) cream before serving.
If you want cold soup, vichyssoise or watercress soup made with milk/cream is very nice too.
