Looking for recipes for a whole salmon fillet (the whole side). I don't wan t to cut it into portions, and usually either just pour teriaki over or just garlic and dill. What else can I do to make it look more fancy/interesting?

Do you have the BY cookbook? there is a great recipe in there- it's super easy but looks so elegant.
It has dill, garlic, and lemon slices; and there is a recipe for an accompanying sauce.

Herbed Salmon with Spicy Brown Mustard Sauce
From Bais Yaakov Cookbook
Herbed Salmon:
1 (2.5-3 lb) salmon fillet, skin on
6 cloves garlic, minced
¼ tsp salt
¼ tsp black pepper
2 T fresh dill, finely chopped
1 lemon, juiced or thinly sliced
Spicy Brown Mustard Sauce:
¼ c sugar
¼ c white vinegar
2 tsp dry mustard powder
½ c vegetable oil
6 T fresh dill
For Herbed Salmon: Preheat oven to 350. Place fillet in 9x13 pan. Mash garlic with salt and ground black pepper in small bowl to form a paste. Spread over fish. Sprinkle dill over garlic. Squeeze fresh lemon juice over dill, or slice lemon very thinly and arrange slices over dill.
Bake 30 min. Transfer to serving platter.
For sauce:
Whisk sugar, white vinegar, dry mustard and vegetable oil in small bowl. Add dill, mix well until combined. Drizzle sauce over salmon, or serve on side.
(I never make the sauce- salmon tastes great without it. Make sure to use fresh dill, as that is what gives the salmon its elegant look.)

In the kosher by design Entertains there is a great recipe.
Basically the fish is covered in a thin layer of honeyed mustard.
then layered in alternating stripes of green zucchini, yellow zucchini and tomato slices.
Then topped with a panko and dill crumb topping.

Manderine Salmon with pepper slaw
Salmon
Salt and Pepper
Teriyaki sauce (not too much, thinly brushed)
Bake as you usually do
Red, Green Yellow peppers
Red onion
Manderine oranges in a can, SAVE THE LIQUID
Rice vinegar
Thinly slice, julian, the peppers and the onion.
Take the liquid of the mandarines and mix equal parts of vinegar.
Marinate the veggies
Can be done 1 day ahead
Plating- take a long platter around the edges mound the "slaw".
In the center place the warm salmon.
Spoon the marinate liquid over the salmon.
Decorate with Manderines.
