Great ideas here; you are all doing so much!

Eemaof3, what was that "unfriend rice"?

Ruchel, I had a lot of fun remembering my French in perusing your recipes. Thanks for all the great ideas! Just a note about the first one - I have found that if you slice zucchini (courgettes) thinly enough, it doesn't need to be sauteed in all that oil, and still cooks fine.

I think I will keep it simple for the late night meals.

First night:
Mushroom soup
Challah and spreads
Homemade pizza
Fried cauliflower
Green salad
Dairy cookies (chocolate chip, one more)

Lunch:
Challah and spreads
Lasagna and homemade garlic bread
Green salad/cut raw veggies
Fruit, ice cream and toppings

Tea (birthday party for DH and a friend):
I am bringing:
Ricotta lemon tart
Onion, mushroom, and mozzarella quiche
Chickpea and sundried tomato salad

Second night dinner:
Challah, spreads
Stir fried ginger chicken with vegetables
Steak cooked in the smoker
Garlic stir fried green beans
Garlic mashed potato
Roasted butternut squash
Fruit, chocolate

Second day lunch:
French onion soup
Vegetable curry
Brown rice
Leftover pizza/ dairy chik patties for kids
Baked salmon with lemon pepper
Salads
Any other leftovers
All the leftover dairy dessert

Chicken Livers Glazed with Wine Sauce (from Efrat Libfroind's Kosher Elegance):

- 4 Tbsp oil
- 4 tsp margarine
- 2 cloves garlic diced
- 2 onions, quartered then sliced
- 2 lbs fresh, broiled chicken livers
- 4 Tbsp flour, seasoned with 1/2 tsp salt and a bit of paprika
- 1/2 cup semi-dry red wine
- 2 Tbsp honey
- 2 Tbsp plum jam
- 2 Tbsp pomegranate juice concentrate OR date syrup (Silan)
- 4 sprigs scallions or chives, chopped (optional)

Place margarine and oil in a wide, shallow pot and heat until margarine melts. Add onions to pot. Add garlic. Saute slowly on a very low flame until onions are just barely golden.
Dip lives in seasoned flour and add to onions and garlic. Using 2 spoons, stir-fry the mixture for about 3 minutes. Add wine, honey, jam, and concentrate (or date syrup). Cook for about 5 minutes, until sauce acquires a glazelike consistency and coats the liver.
For an elegant presentation, sice an apple into thin rounds. Spread out 4-5 slices, fanlike, on a plate and place 2-3 livers on top. For added color, blanch slices of sweet potato in hot water and place between the apple slices.
For a simpler presentation, arrange livers on a small serving plate and sprinkle with chopped chives or scallions.
TIP: I try to minimize margarine in my recipes, but here it is absolutely essential when sauteing the onions. The combination of margarine and oil does wonders for them. Don't be tempted to leave it out!

Sorry to hijack, but I'm looking for ravioli dough and can't seem to find any. Does anyone know what else it might be called or what other dough I can use for homemade ravioli? If you help me, my Shavuos menu will include delicious homemade sweet potato ravioli. Smile

I think yitzi's krepal dough can be used for ravioli

No milchigs, wheat or eggs. Family allergies.

Wed. day meal:

Same fish plate
green salad with sweet potato crisps and mushrooms
hearts of palm salad
tangy red cabbage salad
oriental chicken
rice or quinoa
pareve, gluten free cheesecake

Wed. night meal:

pan seared halibut
Israeli cooked tomato and green olive salad
Green salad with honey mustard and roasted veggies
Ukrainian borsht
BBQ grilled chicken breasts
garlic smashed potatoes
jello and fruit

Thursday eating out.

salmon loaf (with satueed spinach and mushrooms, in puff pastry)

Vegetable curry:

1/4 cup butter
2 tablespoons olive oil
1/2 large onion, finely chopped
2 large carrots, sliced
2 tablespoons curry powder
1/2 teaspoon ground turmeric
salt and ground black pepper to taste
1 pinch red pepper flakes
1 head cauliflower, broken into small florets
2 large potatoes, peeled and cubed

Heat the butter and olive oil in a large skillet over medium heat. Add the onion and carrots; cook and stir until tender. Season with curry powder, turmeric, salt, pepper, and red pepper flakes.
Add the cauliflower and potatoes to the pan, and stir to coat with spices. Reduce heat to medium-low, cover, and simmer for 20 minutes, or until the potatoes are tender. Stir occasionally.

You can add green beans, peas, spinach, sweet potato, celery, or other vegetables if you wish.

I actually changed my mind, and opted for curried fish soup:

Ingredients
1 T vegetable oil or butter
2 medium-large onions, diced
4-6 garlic cloves, minced
1 t salt
1 cup finely chopped celery
1 T curry powder
½ t turmeric
½ t ground black pepper
4 cups diced potatoes
½ cup diced carrots
4 cups vegetable stock
½ cup dry sherry or dry white wine
1 lb mild white fish fillets, such as hake, sole, or scrod
2 T cream cheese
1 cup milk or half-and-half
1½ cups frozen peas
Instructions
In a large Dutch oven or soup pot, heat the oil on medium heat. Add the onions with a pinch of salt and cook, stirring, for 5 minutes. Then add the garlic with some more salt (to taste) and cook another 5 minutes, stirring often. Add the celery and carrots and sauté for about 4 more minutes. Add the curry powder, turmeric, and black pepper and cook for 1 to 2 minutes, stirring constantly. Add the potatoes, stock, and sherry or wine.
Cover and bring to a boil; then reduce the heat and simmer until the vegetables are very tender, about 15 minutes. Rinse the fish fillets and cut them into bite-sized pieces. Add them to the pot, cover, and cook for 5 to 7 minutes, until the fish is no longer translucent. Remove from the heat.
In the meantime, use a blender to puree the cream cheese and milk or half-and-half. Add some of the soup and puree. Stir the puree back into the soup. Taste for salt and pepper--or lemon juice. Add the peas and heat through gently before serving.

Here is the ginger chicken:

3" cube of fresh ginger, thinly sliced
1 pkg of 2 chicken breasts
Vegetables of your choice. (I used mushrooms, broccoli, carrot peelings, and snow peas).
Potato starch for dredging
Sauces (I used a mix of hoisin sauce and Trader Joe's Island Soyaki). If you don't have sweetened sauces on hand, use 1T soy sauce, 1/4 c water, and 4 tsp brown sugar.
Oil

Cut chicken into bite sized pieces. Dredge in potato starch, and marinate in sauce. Heat 2 T oil in wok or dutch oven. Stir fry ginger slices until they brown at the edges. Add chicken (reserving sauce), and stir fry until almost done. Remove chicken onto a plate. Add a little fresh oil, heat. Add checked fresh broccoli or thawed and squeezed packaged broccoli, mushrooms, and carrots. Stir fry until tender. Add meat back to pan, along with rest of sauce. Stir fry for 2 minutes. Add snow peas, stir fry another minute. Cover until ready to serve.

Mazour makes a ravioli dough or if you live in Brooklyn Jerusalem glatt on kings highway makes their own.

So I finally got myact together, and started planning for yomtov:

First night:
mini mushroom quiches
sweet and sour salmon
roasted potatoes and string beans
cheesecake

First day:
lettuce, cheese and croutons salad
lasagne,
blintzes
broccoli
strawberries and whipped dairy cream

second night:
Fruit soup
roasted lamb
tiny meatballs
fried rice
cucumber salad
blueberry pie

Second day:
fruit soup
onion quiche
blintzes
salmon
caesar salad
cheesecake, dairy ice cream


Now just got to do all the shoping and cooking! so far, al I have made is cheesecake....so I stil have tons to do...
