I need to make potato kugel for more than 100 people for a community dinner and all my cookbooks are on a lift.
I remember in one of my cookbooks (maybe balabuste choice?) There is a recipe that serves 75. Anyone have this recipe or any recipe to feed more than 75 people? Looking for a recipe where potato amounts are given in lbs.

Can you take a regular one and multiply by 10 or 20?

This is definitely not enough for 100 people.

I have a recipe for a roaster size pan (think the biggest size avail) potato kugel. Come out about 30-40 slices. I make it very often for peoples simchas. I don't cut before I just send it so don't exactly know for how many servings.

24 potatoes
20 eggs
2 cups oil
2 cups seltzer
3 T salt
Dash of white pepper
I small onion (optional )

If you make this recipe 3 or 4 times you should have plenty.

The balabustes choice has a fabulous one that goes in a 9x13 and a small rectangle (4x6?). It serves around 15-20 slices.
Just make the recipe 6 times and you are done. It is so easy.

I can't remember the exact recipe off hand but I can look it up at home. It is 5lbs potatoes, 1 onion, oil, water, 1tbsp salt and pepper and 4-5 eggs.

Nope it wouldn't but it's easy and easily multiplied, I sometimes do it as muffins as cookie cups it saves you from kugels that get massacred and u can use l.o with style ;-)

I have a wonderful recipe, whoever tried it, sticked with it!

This recipe gives you approx 40-50 slices.

15 lb Cyprus potatoes,
2 medium onions,
10 eggs,
3 cups oil,
3 Tsp salt,
15 shakes of black pepper.

bake in a 16" for 1 hour on 250° and 2 hours on 180° leave to cool in oven.

Hatzlooche!...

Three large roasters should be enough for 100 people. About 25 lg. potatos fit into a lg. roaster. 21/2 cups oil. 15 eggs 2 tblspn. salt flat tblspn bl. pepper. Put on 500 until you have a good crust - about half hr. cover and lower to 190 for a good few hours-can be all day. It's heaven
