Anyone have a Layered Vegetable Kugel recipe without mayo?

I copies this from the Amazing Pesachdik Recipes thread:

In three separate bowls combine each layer. Place layers in pan. Bake for 1 hour, or until golden.

I may be dense, but wouldn't the squash and the sweet potato layers come out looking like pretty much the same color?
Any idea how to do maybe a spinach (or other green) layer instead?

: ) I may be dense, but I think she meant zuchini when she wrote squash.

This is not layered, but looks really good.

try to use your regular recipe just substitute 1/4 cup of oil to the 1/2 cup of mayo and if you want your zuchini part darker peel all but two so the colour is nicer
