Anyone have a recipe for a potato kugel made with Yukon gold potatoes that don't need to be peeled?

I use a regular potato kugel recipe and just wash the potatoes well. I also use red potatoes.

A year or so ago I was in a rush and didn't have time to peel my potatoes, and was surprised to find out that you couldn't tell.. Since then I have stopped peeling potatoes for kugel, and there is no noticeable difference imho.

I don't think it works as well with Russet or Idaho, or the cheapest potatoes in the store. It should be fine with yellow, or maybe red too. Same recipe.
