I would like to make a dish that layers eggplant slices, ground beef, and marinara sauce. Does anyone have a recipe? Do I have to bread and fry the eggplant before layering it or can I just put it in plain?

I call mine "meaty eggplant parmesan". It´s heaven! Everybody loves it!!
Slice eggplants. salt the slices to extract bitterness and rinse well. dip in egg and crumbs (+a bit of garlic) and fry. Then I take ground chicken (use beef if u like), spice it and add some sauteed onions ( I dont add an egg, simply cuz it doesnt stay as neat. it becomes more watery). now make some "sandwiches": eggplant, meat, eggplant.
Prepare the tomato sauce: add spices and sugar. make sure to taste it so that it is sweet enough. pour over eggplant and bake at 320 for approx. 1hr. Depending on how u like it. I like it well done!

It does sound like moussaka.
You do not need to bread eggplant. Just quickly fry the slices in oil. You do need to brown the meat though.
I don't have an exact recipe. Just search here or google it and you'll find plenty.
