Does anyone have a tried and true recipe for soup croutons, like mandelen? Also it would need to be baked and not fried as I cannot have fried foods.

take an old challah, cut into cubes, put on salt, put in baking pan and bake for 30 to 40 minutes at a bit over 400 degrees. Just did it for shabbos now. Crunchy, no fat and delicious.
