I'm looking for vegetarian lunches that I can pack for work that I won't need to wash on, and that don't need to be warmed up. Just something I can pull out of my bag and eat at my desk.
So far I've come up with:
brown rice pilaf with veggies and chickpeas
quinoa with various veggies and beans mixed in
chili mixed with quinoa
lentil soup in a thermos
a baked sweet potato with black beans and spices on top
What else can I try? Thanks!

salad with any protein, like tuna, cold chicken or eggs. Eat with rice cakes or whole wheat crackers.

Today I ate couscous salad with tomatos, cucumbers and a boiled egg. You can also try a vegetable kugel.

Aside from eggs, beans (and/or shredded cheese if dairy is okay) are vegetarian proteins you can add to a green salad. You could also throw pasta (or quinoa) into the salad and skip the rice cakes or crackers.
some other ideas to mix and match
-cheese or egg salad on crackers
-cottage cheese or yogurt with fruit (you could throw in some granola or cereal)
-veggies dipped in chummus
-tofu pad thai (it's good cold)

Most, but not all. I know my DH doesn't hold by that, and we don't wash on wraps that are made with fruit juice.

Veggie burger with salad, eaten with mezonos bread or pita, or do crackers for carbs.

I frequently make stir-fry for DH with tofu/scrambled eggs, lots of veggies, and either rice or noodles

Yogurt, with or without topping
Pareve chicken patties
Cereal (I like Qia, which is chia, buckwheat, and hemp) with some milk in a thermos

frittata or quiche are both nice cold.
cheese, crackers, and salad.
is fish ok? Tuna patties, salmon flaked into salad, smoked salmon.
lentil or bean sprouts in salad.
veggie burgers, homemade or bought.

"falafel" salad
I make a Dr. Prager grilled veggie burger and cut it into cubes (I think there's like an Italian or Mediterrainian flavor) I put it on lettuce, chopped tomatoes, chopped cucumbers, chicpeas, maybe olives or chopped pickles if I have them on hand. Dollop of Hummus. sauerkraut (if I have on hand) and techina for dressing.
YUUUUM. Totally falafel-ish flavor with no frying and lots of protein from the veggie burger (it has a soybean base) and the chicpeas.

Thanks! Some great ideas here. Plan on trying quite a few.
(We hold that you have to wash on mezonos bread/pita/tortillas if you're kovea seudah. I'm envious of those of you who don't hold that way, it must make life easier!)
