Made a veggie shashuka today, really good, even cold.
Sauteed few cloves chopped garlic, few onions, chopped peppers (great to use up the older wrinkly ones) and lots of ripe tomatoes in a little oil in frying pan (ovenproof is best if you want to bake in oven). Added crushed tomatoes, salt, cayenne, fresh/frozen parsley and cilantro and simmered till soft. Mixed in a few eggs and broiled in oven a few minutes until the eggs set. Some like whole eggs broken on top but I like them mixed in. Very yummy. Can serve with crusty bread or any other starch if you prefer.

Herbed Tilapia with mashed potatoes
grilled vegetables Linguine and salmon patties
pizza and salad
tuna pasta casserole
I hate fish and DH hates dairy - we make a great team during the nine days!

I use 1.5 cans rinsed and drained lentils. I use the food processor and use as much breadcrumbs as listed.
