Recipe calls for mustard. How strong is the mustard flavor?

Not too strong
(although to answer your question, I prefer simple spiced salmon recipes that just enhance the salmon flavor- I could do without the sugar, mustard and other ingredients)

If you like honey mustard, go for it.
If not, change up the sauce using soy sauce or ketchup instead of mustard. Both make different but good dressings.
