Chocolate crockpot cake

awhile back someone posted a chocolate pudding/lava cake you make in the crockpot. it was delish, but I have now lost the recipe- anyone have it????

I don't have mine on hand, but I bookmarked this thread so I'll remember to get back to you.

My main recipe is from scratch, but I've also tried making a Duncan Hines recipe according to the box, pouring it into a lined crockpot, then making instant pudding (1 pkg pudding + 2 c. soy milk) and pouring that on top of the cake batter, and ZEH HU. Cook 2-3 hours on low, and it comes out great. Fluffier and not as rich as my from-scratch recipe, but certainly QUITE edible Smile

Crockpot Chocolate Pudding Cake

nonstick cooking spray
1 c. flour
2 tsp. baking powder
1/4 tsp. salt
1 c. sugar (divided)
1/2 c. cocoa powder (divided)
1/2 c. soy milk
1 tsp. vanilla
1/4 c. oil
1/2 c. dark brown sugar
1 c. boiling water or coffee

Spray inside of crockpot. (If you have a crockpot liner, that would probably be great, though I never use one.)
Combine flour, baking powder, salt, 3/4 c. of the sugar and 1/4 c. of the cocoa in a mixing bowl. Add soymilk, vanilla and oil and mix. Batter will be stiff. Pour into crockpot and smooth out the top.
Mix brown sugar, remaining 1/4 c. sugar and remaining 1/4 c. cocoa in small bowl. Sprinkle in even layer over cake batter. Pour boiling water/coffee over all.
Cover and cook on high for 2ish hours on high, or 4ish hours on low. Top of cake will be set, but bottom will be syrupy.
Serve in bowls, spooning the syrup on bottom over cake like a sauce.

Approx. 6ish servings (though DH and I can totally eat the whole thing ourselves over the course of 24 hours...)
