Hello
does anyone make their own chickpeas/arbes
I try to soak it and cook it with sugar and spices but I never know how long to cook it for to get the right consistency, either it is too raw or too mushy, so if anyone has experience making it I would greatly appreciate it

soak it overnight and rinse well
Cook it without spices for about 4 hours. If you need to add water during cooking. Do not spice it in the pot.
Taste it and see if it is soft the way you like it, When it is ready, Pour all the water off (in a strainer)
Place all the chickpeas on a big towel. Spice it liberally with salt and black pepper. Roll the towel around the chickpeas like a candy wrapper. You hold the 2 ends and mix and roll the chickpeas inside for a minute or so. You will open it and everything should be spiced evenly. Taste it to see if you need more of anything.
We don't like the chickpeas sweet so no sugar, but I guess you can add sugar this way too.
