Rosh Hashana 2014
tentative menu Smile
we are vegetarians and others eat vegan at home
1st night

Challah, honey "simanim" (agave syrup for vegans)
Tournedos of salmon with dill sauce,
Baked spiced carrots and parsnips ( or Jerusalem artichokes) with dates, cumin, coriander, cinnamon bark, salt and pepper.
brown and wild rice Timbales.
baby lettuces with beets and pomegranate seeds
Chinese vegetables with noodles
pavlova with fruit
double chocolate brownies
morning 1
challah

Bok choy and shiitake quiche
Tilapia with arugula capers, lemon and tomatoes
kale, pear and almond salad with balsamic vinegar
baked sweet potatoes mashed with apple sauce and topped with caramelized onion
baklava
Home made Ice cream

for middle afternoon ( always tea or coffee)
beet chocolate cake (awesome cake)
dates cookies

night 2
celery root soup with apples
squash stuffed with quinoa with spices
creamy spinach lasagna
maple caramel apple tart

Day 2
Kuguel Yerushalmi
mushroom meat balls (no meat) ( with carrots, almonds and spices) with tomato sauce
mashed potatoes
Asian salad with pears and coleslaw
lox pizza
baked banana with Cashew nut cheese (home made) pie and date syrup.
may be I will change the order or add other things

Ice tea, fresh fruit, lemonade, etc

Nonmeat balls,
make 15 small meat balls
1 pound fresh Portobello mushrooms finely chopped
2 tablespoon of olive oil
1/2 cup finely chopped onion
3 cloves of garlic minced
1/2 cup oats
1/2 cup shredded carrots ( or bread crumbs)
1/3 cup of chopped almond o walnuts
1/4 cup chopped parsley
2 eggs divided
1 teaspoon of salt
black pepper
pinch of cayenne pepper
3 cups of pasta sauce


Heat 1 tablespoon of oil in a skillet. add mushrooms, cook until liquid from mushrooms has evaporate.
reduce heat to medium and stir mushrooms until toasted brown.
stir onions into mushrooms, cook 5 minutes. Remove from heat, stir garlic.
Transfer to a mixing bowl.
Add oats to the mix, bread crumbs, almonds (or walnuts), parsley, 2 eggs, salt, black pepper, cayenne pepper, oregano.
Mix together. The mixture should hold together when pressed.
Cover bowl with plastic wrap and refrigerate for 3 hours or overnight.
Preheat the oven to 450 F line a baking sheet with parchment paper.
Using two tablespoon scoop form the balls.
Arrange meatballs on prepared baking sheet.
Bake for 12 to 15 minutes until they are golden brown.
Bring pasta sauce to a boil in a large saucepan. Reduce the heat and gently stir
meatballs into sauce. Simmer meatballs in sauce until cooked though, 20 minutes.
For a vegan recipe the 2 eggs substituted by 2 tablespoon of flax meal and 3 tablespoon of water, mixed before add them to the recipe.

I like to make them with mango sauce


Mango sauce recipe
2lbs of ripe mangoes
1small onion
2 sweet red peppers
2tbls-1/4 cup white vinegar
Salt
A little sugar if needed


First, cut the mango into two long flat halves around the stone inside. Pull the two halves apart and discard the stone. Scoop out the flesh with a spoon and place into a blender.
Chop the onion and sweet red peppers, and sauté over medium heat in about 1Tbls of vegetable oil. Sautee until the onions and peppers are soft, about ten minutes.
Add these sautéed onions and peppers to the blender with the mango flesh and add your 2 Tbls of vinegar.
Puree the mixture until smooth.
Add 1/2 tsp of salt and taste. You want the sauce to be sweet and tart and savory, without being noticeably salty

I haven't made my menu yet, but reading thru all of your ideas has been a great help in my brainstorming. Thanx!
A few ppl mentioned that they are making chocolate mousse, do any of you have a recipe that is mousse with cake on bottom?

it's just me, DH and DS so I'm keeping it very simple.
1st night:
challah (all meals)
roast (recipes or ideas appreciated)
carrot kugel
teriyaki string beans

1st day:
oshpelau (rice with meat and carrots)

2nd night:
stuffed turkey roast
orzo with peppers

2nd day:
meatballs with peas and rice

friday night:
chicken soup, leftovers if anyone still wants food

shabbos day:
chulent

first and second night simanim:
swish chard patties
leek patties
black eyed peas in tomato sauce
roasted butternut squash
dates
apples
honey
pomegranate
fish head
new fruit (2nd night)

salads (all meals):
chumus
beet salad
matbucha
coleslaw
tehina
tomato dip
hilbe
olive dip

desserts:
honey cake
apple cake
brownies

Honey Drumsticks
1/4 Cup honey
1/4 cup ketchup
1 Tbsp Soy sauce
2 tsp fresh ginger (I've made it without)
10 chicken drumsticks

Heat an oven to 400*
Combine the ingredients and coat the chicken, bake it for 30 minutes.
*If you are using regular chicken and not just drumsticks bake it for longer.

Honey Potato wedges
5 lb red potatoes cut into wedges
2 1/2 Tbsp onion soup mix
3/4 cup honey
1/2 cup olive oil

Preheat the oven toss the mixture and coat the potatoes.
Bake it for 1 hour uncovered.

See how I like it, nice and easy Smile

That was actually my menu from last year!
I am at work so I don't have the recipes with me, but I can tell you where they are all from so you can track them down.

They were all 3 real big hits! (Though my husband didn't go for the jicama taste)

veal spinach roll - is a long time family favorite from the original Kosher by Design. I googled and it seems this is it-

Okay, you guys have inspired me to get a move on my menu...so thanks! The day meals and first night will just be me, DH, and our 1 year old, and the second night and Shabbos I am planning for the likelyhood of having any number of Bochrim.

Wednesday Night:

Simanim:
Apple and honey

fish head
gefilta fish
beet salad
leek patties
cooked carrots

Chicken soup
Brisket
Garlic Noodle Kugelettes (thanks Eemaof3 for your recipe from last year...it is still a winner in our house!)

Thursday Day:

Hot Dogs in Blankets, large size from Susie Fishbein's Teens and Twenty Somethings Cookbook
Brisket (we bought a massive one that should last us all Y"T)
Roasted Red potatoes
Spicy Green Beans

Thursday Night:

New Fruit
Chicken soup
Leftover leek patties, green beans, and beet salad
Brisket
Israeli Couscous with mushrooms and onions
Apple-cranberry crisp

Friday Morning:

Hot Dog in Blankets
Brisket
Apple-cranberry crisp
Broccoli

Friday Night:

Geflita fish
Chicken soup
Brisket
Garlic Noodle Kugelettes
Carrots and beet salad

Shabbos Day:
Gelfita fish
Shnitzel (for a change...)
Potato Kugel
Coleslaw
Apple Crisp
Any and all leftovers I need to use up

Desserts:

Honey cake
Caramel pie
Peanut butter cups
Chocolate Town Pie

Wow! What a list! Now I should actually get moving with it maybe???
