Corned beef question ASAP

For Pesach I made my first corned beef. It was delicious. Now I want to make it again, but I can't remember if I boiled it in the brining bag.

I was told in Pomegranate, boil it for 1 hr, on high. Then low for another hour.

Also if I put my corned beef brisket in a stock pot, can I put more than 1 at a time.

I bake mine sometimes -- cut it out of the bag, spread either some barbecue sauce or honey & mustard on top and bake like a roast. REALLY yummy.

I've never left it in the bag. And yes, I've put two in a pot at once as long as they fit well with enough water to cover; cooking time might be slightly longer -- check for tenderness with a fork.

You can also bake it in the oven in a tightly-covered pan of water. If you do this and use a disposable pan, double the pan as it is hard to take a hot, flimsy pan with a lot of liquid out of the oven without spilling. This way also takes longer to cook -- maybe 25% longer.

I once tasted the most delicious corned beef in a hotel. It was so good that I went to the kitchen to ask the chef how to prepare it. He said that you slow cook it in the bag for hours on low. Take out, smear mustard on top and serve. Deliciously soft.

how can you boil the meat in the plastic bag? doesn't it leach the plastic chemicals into the food?

I'd like to try this but I'm hesitant because of the plastic issue.
