So of course I am running low on eggs and won't get to the store until later. I have 3 egg whites just sitting here. Anyone know how to make a potato kugel with egg whites (and possibly another 2 whole eggs)? Also, I only have white potatoes -- will they be ok in it?

Just substitute 2 whites for one egg either completely or in combination with whole eggs. And white potatoes are fine.

It will work with the whites but I would add at least one whole egg. White potatoes aren't as starchy as russet or Idaho. Won't have the same creaminess
