I made the kokosh recipe in the spice it right cookbook (called roizy's kokosh) and I let the dough rise because I thought I would use it that day. (the recipe says the dough doesn't need to rise, but I put a note in there to let it rise, so I guess I thought it would be better that way.)
Anyhow, it says in the cookbook that you can freeze the dough, so I did but now after defrosting it, filling, rolling etc. it's not rising.
I tried baking one loaf w/o it rising and while the taste was good, it was flat and heavy from not rising.
could the yeast have died in the freezer?
Any idea how to get my two filled rolls to rise?
Please help, I don't want to throw out so much dough.
