I planned to make garlic chicken and brown rice for our pre-fast Seuda.

However, there was no chicken on the bone so DH brought home chicken breasts.

I think it's too dry, and not ideal pre-fast, to have Shnitzel. I don't have any vegetables in the house
to make a stir fry or soup.

Any ideas?

As long as you don't make it too salty, I don't see why breaded and fried schnitzel won't work. Another yummy and not dry at all recipe that my family loves is to sautée an onion, add cubed cutlets and a can of tomato sauce. Let cook about 25 minutes and season with 1/4 c sugar and some garlic.
