Whenever I get my sheitels back from being washed and set they feel so much thinner (like a lot of hair is missing). Is this normal/does anyone else notice this?

They wash off all the pollution and make it less frizzy. Clean smooth hair feels thinner than dirty frizzy hair.

I think it's also the heat styling. I have very thick natural hair and I remember whenever I would have it blow dried then flat ironed by a hairstylist it was super sleek and felt way thinner than when I styled it myself.
