I baked a 5 lb chuck eye roast for about 4 hours. It was only supposed to bake for 2 1/2- 3 1/2 hours. It is now very chewy, and I'm afraid that it overbaked, and is ruined. Can I salvage it? Is it possible that it's not ready yet? The sauce is a mixture of soy sauce, brown sugar, mustard, duck sauce, orange juice and grape juice.

Did you bake it covered?
Chuck eye is a very tough roast.
Cool it overnight in the refrigerator. Slice. Freeze. Reserve the liquid. Then reheat in the liquid on YT and it will continue to soften as it rewarms and cooks.
