I was looking for a healthier alternative to the apple pie we usually have the 1st night

I did a test run tonight. I used Nuts Galore ground almonds instead of almond meal which I could not find easily and didn't feel I needed to run around. I used a spoonful of Trader Joe vanilla soy based ice cream. Tofutti should also work. I drizzled it with Agave nectar instead of maple syrup. It was delicious and elegant. No sugar! (except for the ice cream.) I did not use wire racks, just baked on parchment paper on a cookie sheet (non-disposeable)

It is perfect for yt rather than Shabbos because putting cold ice cream on top of hot apples may be a halachic shaila (bishul)
