Healthy portable breakfast ideas

I'm looking for ideas of things I can make and freeze for my kids to grab in the mornings and eat on the way to school.

They don't like banana muffins, so any other ideas would be great. Something filling that uses oatmeal if possible - and any healthy cookie ideas - or even pancakes.

Recipes - with measurements please!

DH just baked a few types of muffins to freeze for school.

He started with blueberry, plum, and banana.

His plan is to continue stocking the freezer with all sorts of varieties. No nuts or seeds allowed in school, so that limits the choices somewhat. Other possibilities include: apple, cranberry-orange, chocolate chip, squash/pumpkin, corn, oatmeal raisin, peach...

I sometimes make baked oatmeal with blueberries. I bake it in muffin cups so it is portable. I need to go on my computer to find the recipe.

Spelt oatmeal chocolate chip cookies.
This is my go-to healthy breakfast cookie recipe. It takes minutes to make and comes out good every time!

1. I subsitute the coconut oil with half a cup regular oil. (I can't find coconut oil here)
2. Sometimes I add a shake of cinnamon or nutmeg or both.
3. You can sub the chocolate chips for raisins.
4. I actually made them into bars yesterday instead of cookies- I flattened the dough into a greased 9x13 and baked for 25 minutes.

Just as a btw, I never use a mixer. These are fine mixed by hand.

Muffins are very versatile. Exchange the milk for any liquid, the flour for any grain, the oil for any fat or applesauce, the sugar or any sweetener or reduce it.
Add up to 1 1/2 cups of fruit, veggies, nuts and spices paying attention to the moistness decreasing the "milk" if needed.

Sure, here you go!

2 cups whole wheat flour
2 cups oatmeal
1 cup unsweetened applesauce (I've also used sweetened and didn't notice much of a difference..)
2 eggs
1/2 cup oil
2 tsp cinnamon
1 tsp baking soda
2 tsp vanilla extract or vanilla sugar
3/4 cup honey or more to taste (I always do this amount but if you prefer sweeter, then maybe add a bit more!)

Mix and pour into muffin tins, bake at 350F/180C for about 20 minutes. Enjoy!

PS. I'd like to point out though that my 3 year old didn't always like them. As I said, she's very picky, and all of a sudden she's asking me for these. They're not very sweet (unless you add extra honey), but I personally love them Smile

Oh also my friend just gave me a relatively healthy (very little sugar) pancake recipe. I made them yesterday, and then froze the rest.

You can freeze:

Tuna sandwiches
Cream cheese sandwiches
Peanut butter sandwiches
Cheese sandwiches
Pancakes
Oat bran muffins
Frozen yogurt pops

You can bulk up the pancakes and baked goods with protein powder if you need to.

If your kids aren't fussy about the way defrosted foods taste there are more options like eggs on English muffins, etc.

I saw an amazing idea, don't remember where, facebook suggested post maybe? anyway, you fill a muffin tray with chopped veges, then scrambled eggs, maybe some shredded cheese, bake them, and freeze. portable omelet muffins Smile

I do this but don't freeze - just refrigerate in individual portions.

You can make granola bars with dried fruit and oatmeal, rice krispie treats with fruit, fruit smoothies.
