Cooking once for two meals

Anyone have any ideas on planning meals that you can cook once and then use the remainder as a different dish the next night? I really need to cut down on my workload right now...

Here's what I did this week:

1st night - Roast chicken
2nd night - Chicken/Potato Hash

What else?? Many thanks!

Most stir frys and/or sauces can easily be turned into a delicious soup with minimal effort.

at the beginning of the week cook enough steamed rice and plain pasta to last the the week

Day 1: baked salmon, steamed rice
Day 2: crumbled salmon over cream sauce pasta with peas
Day 3: fried rice with peas, london broil
Day 4: shredded beef tacos with fresh chopped tomato salsa
Day 5: pasta with fresh chopped tomato salsa and cheese

if you reserve the extras while they are parve, you can use half one night for dairy and half the other night for meat.

some more ideas

sticky chicken - > chicken pot pie
roasted vegetable wraps with cheese - > roasted vegetable pasta or roasted vegetable lasagna
ground meat tacos - > meat lasagna
baked fish - > fish tacos
hot dogs - > hot dog and spinach fritatta

maybe tell us what you want to make and we will try to figure out how you can remake it the next night

This is right up my alley RAmom!! What do you put in you fish tacos (and what do you use for tacos?)

Night 1: Grilled Chicken (or really any type of chicken)
Night 2: Chicken Pita Sandwiches (Salad with chopped chicken with Greek vinaigrette [oil, red wine vinegar, lemon juice, garlic, salt, pepper] and techina\chummus in a pita pocket)

you could do salmon one night, and salmon patties the next.

We had spaghetti and meat sauce twice this week; no one objected. I served it the second time two nights later. But meat sauce could also be served as sloppy joes, or with rice, or made into lasagna, or with tortilla wraps and guacamale.

Why not make two meals worth, and serve on alternating days. So cook meals a and c on day 1, meals b and d on day 2, then have 2 days of reheated meals.

(I do the same thing 2 days in a row, usually Monday and Tuesday, and actually make the whole thing on Sunday, just reheat half on each night. But I get home after 7pm those days and usually leave the house at 7am, so am too tired to do anything other than warm up a prepared meal.)

flake the breaded white fish fillets and serve in tortilla wraps or taco shells with dijon sauce (see recipe below) and chopped vegetables (like avocado, tomato, red onion or vegetables of your choice)
