Carb free soup

I want to make a creamy pareve soup that is carb free.
All the recipes seem to have flour or potatoes.

Can anyone help me?

I don't know if these are carb free or low carb, but here are some ideas:

Butternut squash soup.
Zuchinni soup.
Tomato soup.

I can try to find recipes for you if you'd like.

I could be wrong but I think butternut squash is somewhat starchy and tomato has a significant amount of carbs as well.

I like to make a carb- free zucchini soup.
Sauté 3-4 onions and 2-3 stalks of celery (depending on size) for at least half hour or until browned.
Scrub and cube 8 zucchini (you can also peel them, but the peel enhances the flavor and color IMO) and sauté for around 20 minutes with the onions.
Add water TO COVER. Don't add two much water or the soup won't be as creamy.
Add salt and pepper to taste. If you eat soup mix, add a little chicken soup consommé.
Bring to a boil and then let simmer for at least half an hour. Blend until smooth.

You're right (just looked it up online).
Here are some other ideas:
Mushroom soup
Red bell pepper soup (I think I've seen some recipes for that in some cookbooks)
Cabbage soup
Celerey root soup

If you use any vegetable its imposible for your soup to be carb free.

If you are asking for low carb creamy soup, any low carb vegetable can be blended into a purée.
Just cook your vegetable, steam, boil bake, microwave, any way you like and blend it in the blender like you would baby food. Season according to taste. The less liquid you use blending the thicker the soup.
Low carb veggies:
Cauliflower
Brocolli
Zucchini
Spinach
Cabbage
Celery
Asparagus
Mushroom

I don't know how many grams of carbs you are allowed, but if you are on Atkins induction, you are not going to be able to eat these soups for quite a while. On induction you are only allowed 20 grams of carbs, preferably eaten as 3 cups of leafy greens (lettuce), daily.

Everything has carbs except proteins and fats, so I think you mean starches.

I was able to get a creamy soup by first making a broth from zucchini and pureeing it, then adding the other ingredients/veggies. Another way is to add whipped eggs in fork swirls, the way you would do egg drop soup. That makes it thick, but of course, also eggy.

These are not creamy, but they're very good low carb soups.


Cabbage Soup

1 bag shredded cabbage
5 carrots
5 squash
5 celery stalks
1 onion
2 kohlrabi
Salt & soup mix

Shred all vegetables.
Sauté in oil.
Add water, salt & soup mix.
Cook for 1 hr.


Broccoli Soup

1 bag frozen broccoli
1 onion
5 celery
5 squash
1 red pepper
Salt & soup mix

Dice all vegetables.
Sauté in oil.
Add boiling water, salt and soup mix.
Cook for 1 hr.

I guess I meant without starches, there are definitely good ideas here.
