Not shnitzel (baked or fried), and not grilled (even if it's an awesome recipe), and not in a salad.... anything else to do? (and not in puff pastry either). My fall back plan is fried shnitzel but wanted to figure out what else is out there!

You can stuff it and roll it - don't use this treif recipe but it gives you the general idea

Grilled chicken wraps. You can oven grill the chicken with garlic and basil. Cut chicken in slices, sliced avocado, lettuce, grilled onion. Pesto dressing

How much work are you up to?
In the appetizer section of Kosher By Design I there is a chicken recipe that takes a bit of time to make but is delicious and gorgeous and different.

Basic idea is you wrap the chicken cutlet the long way around scallions and red pepper strip. Marinate, coat in sesame seeds, and cook in a frying pan. Then serve with a red pepper chutney.

I used to make this when I had lots of free time and we always enjoyed it. It is good hot and cold. It was tricky figuring out how to reheat in the oven without drying it out.

I also have a recipe where the chicken cutlet is stuffed with mushrooms and onions. but I don't remember how it tastes served cold.

The easiest ever recipe, that is always a hit-
onion chicken.

Take a sauce you like- honey mustard, duck sauce, teriyaki-whatever. Marinate a bit.

Take frenchs onions, crush them up small, then coat both sides. Spray a baking sheet with pam, cook for 15 minutes on one side, 15 mins on the other.

Easy, popular.
