I want to make a kugel today.I am fed up with the regular potato kugel. I would like to make one with zucchini or maybe sweet potato, but it has to be easy.
please no cauliflower, broccoli or spinach recipes.

Squash kugel.
Boil 6-8 green squash and let all the water drain out I keep in strainer for about 1.5 hr.
Add 2 egg
1 Tbsp mayo
sauteed mushrooms with onion and salt and pepper.
Bake until golden brown Its really good just make sure all the water is drained so its not watery. Warm up uncovered
Zucchini Kugel
5 zucchinis
1 can mushrooms
1 onion
3 Tbsp. oil
1/4 c. mayonnaise
1/4 c. matza meal
2 eggs
1 1/4tsp. onion powder
1 tsp. salt
1/8 tsp. pepper
dice onions & saute the. Slice zucchini very thin in circles fry together with onions and mushrooms until soft. turn off flame
add rest of ingredients and mix
bake in 9x13 pan or round 9" pan at 350 until it starts to brown at sides

5 onions- regular and purple and any other kind you may have including french's
2 cloves crushed garlic
1/2 cup oil
1/2 cup water
1 1/4 cup flour
2 tsp. baking powder
4 eggs
salt, pepper, onion soup mix
1. Cut the onions into rings and sautee
2. Add garlic, salt and pepper
3. Add to the rest of the ingredients
4. Cook 30-35 minutes
