Tried and true lentil soup

Lkavod Parshas Toldos. Are red and green lentils interchangeable? I think I recall reading once that lentils are not supposed to be soaked before cooking. Is that correct? TIA!

Red and green are not interchangeable in general, but they can both be used in soup. Red lentils break down when they cook into a sort of mush whereas green lentils maintain their shape, so the soup will come out differently depending on which color you use (but delicious either way).

Of course, the lentil soup in Parshas Toldos was made of red lentils, so that's your answer there. Smile

No specific recipe, but I saute onions, garlic, carrots, celery, add a few spoonfuls of tomato paste and cook for a bit longer (to bring out the sweetness), add lentils, other vegetables if I have, water and spices (salt, pepper, garlic powder, bay leaves, sometimes cumin and chili powder). Cook for about an hour or so. Try adding some lemon juice to your bowl right before eating; it adds a burst of flavor.

Red lentils work kind of like split peas, they break down into mush as goodmorning said.
I would try to make a soup that has green lentils so you can actually see them Smile
