Potato latkes for dummies

apparently, potato latkes are more of an art than I thought. I grated 4 potatoes, about hf an onion, an egg, half a zuchinni and half a carrot. fried in a little bit of oil in a non-stick frying pan. they didnt taste bad, they were actually pretty good. but they did come out a little flat and wobbly. what did I do wrong?

Did u squeeze out the extra liquid from the batter? If there's too much liquid it can cause the latkes to come out deformed. Try taking a handful of batter in ur hands and squeezing it out really well so that its able to be formed in ur hands.

you need another egg and you can omit the squash and carrot. When you fry, use a lot of oil and a high flame and it will be fine. They will taste crisp ... just the way you want a potato latke to taste. I don't think you can cut back on the oil for frying latkes even though I generally don't use much oil during the yr. (it's chanuka!) The oil and high flame will make it come out like latkes. I never drain or use matzah meal ...it's 1 egg to 2 potatoes for latkes and that ratio will hold it all together.
