Here's the low carb chicken I made last night (I think the recipe is from allrecipes.com)
1 chicken cut into 8 (or 4)
Drizzle olive oil, lots of rosemary, oregano and garlic (and kosher salt and pepper if you want) on top of chicken. Bake uncovered at 375 for at least and hour and 15 minutes- or however you usually bake your chicken.
