ISO short on time (kosher by design) brisket recipe

Brisket recipe with wine, mushrooms, tomatoes... Can someone list this recipe from Kosher by Design Short on Time?

Wine Braised Brisket with Tomatoes

2 Tbsp olive oil
3-4 lb brisket
fine sea salt and black pepper
28 oz can diced tomatoes
2 plum tomatoes, coarsely chopped
2 med onions, cut into 1/4" dice
4 oz crimini mushrooms, sliced
1 1/2 cups Merlot, Cabernet Sauvignon or other red wine

Heat oil in large ovenproof pot. Season meat on both sides with s&p. Sear 5-7 min per side.
Add rest of ingredients to pot of meat. Cover and bake in oven preheated to 350 for 2 1/2 hours.
Cool meat, slice thinly across the grain, add back to pot of veg and heat through.

I have never cooked a brisket before. So many other posters recommend recipes with really long cooking times. I am interested in making this recipe but is the cooking time accurate?

Yes. Brisket cooks low and slow. When done correctly it is such a yummy cut of meat.

The only brisket recipe with short cooking time is the one in pressure cooker. Otherwise I cook mine first at 180C for 25min then reduce to 125C for 3-4hrs (that's for about 2.5lbs) making it sure it's double foil covered. They always come out very soft and easy to slice.

Mrs. Bissli--this is an unrelated question but I love your recipes. Do you have an easy recipe for a Thai coconut soup that can be made with vegetable broth instead of chicken? I lost mine!

Oh, thank you very much! I think I've made Thai coconut curry soup/ Tom Kha Gai (I think that's what is called) only a few times. I'll see if I can post the recipe under the Soup section.
